Scrappy's Black Lemon Bitters

Scrappy's Bitters was started in Seattle in 2008 by bartender Miles "Scrappy" Thomas, who, with only Angostura and Peychaud's on the market, rented a commissary kitchen under an Italian restaurant and made his own until neighborhood bartenders started placing orders. It was the first craft bitters company in North America, and everything is still handmade in small batches in Seattle from organic ingredients, with no artificial flavors, chemicals, or dyes. Black Lemon takes its name from the Middle Eastern spice, which despite the name is actually a dried lime with an earthy, smoky flavor, and the bitters follow that idea: bright, fresh lemon up front with floral notes and a layer of smoky, earthy spice underneath, finishing long with lingering floral and earthy notes, bottled at 45% ABV (90 proof) in a 5 oz (148 ml) dasher bottle. There was nothing like it on the market when it came out. It pairs best with gin cocktails and with sparkling wine, and works anywhere a drink wants bright lemon with some depth behind it, from a Tom Collins to a Champagne cocktail.
