Santo Pecado is the sister label to Santo Cuviso, both from Casa Santeros in Sonora, and both made by maestro bacanorero Rumaldo Flores Amarillas in the Sonoran desert of northwestern Mexico. Bacanora is the regional agave spirit of Sonora, and this joven is the unaged, straight-off-the-still version of it, produced from Agave pacifica (a local form of Agave angustifolia) grown in the dry hills of the sierra. The piñas are roasted in an underground stone oven over encino oak and mesquite, which is where the spirit picks up its smoke, then crushed by hand and machine, fermented with ambient wild yeast, and distilled before being bottled at 45% ABV (90 proof) with no aging and nothing added. The producer describes the flavor as earthy, with pickle-like brine notes and mineral highlights, and that savory, dry, slightly peppery profile is what sets Sonoran bacanora apart from the sweeter espadín mezcals of Oaxaca. It drinks well neat, and the pepper and brine make it a natural swap for mezcal in a Margarita or a Mezcal Negroni.
