Santo Cuviso Uvalama is a flavored bacanora from the town of Bacanora in the Sierra of Sonora, made by Maestro Bacanorero Manuel "El Toro" Chacón, a third-generation producer, for the brand owned by Casa Tres Amigos. Bacanora is Sonora's agave spirit, protected by its own denomination of origin since 2000, and Santo Cuviso means "holy bacanora" in the Ópata language. The base is the house Blanco: mature Agave angustifolia cooked in a conical earthen pit oven, milled mechanically, fermented naturally with wild yeast for up to 12 days, and double distilled in copper pot stills. Part of that blanco is blended with a concentrated infusion of uvalama, a wild Sonoran berry, then rested 10 to 14 days in 5-liter glass jugs before bottling at 45% ABV. Reviewer Eric Zandona of EZdrinking found blackberry and phenolic berry-skin notes over earthy vegetal aromas and citrus, a round, velvety palate with berry fruit and a woody-stem character he compares to grappa, and a medium-long finish of berries, light smoke, and dry tobacco. He recommends it neat, and it took a Gold medal at the American Distilling Institute's April 2019 craft spirits judging.
