Santo Cuviso Bacanora Reposado
Santo Cuviso is the bacanora label of Casa Santeros, the Sonoran company that also makes Santo Pecado, and the name means "holy bacanora," a phrase the local Opata people used for the spirit that a German missionary wrote down in 1756. It is made by maestro bacanorero Rumaldo Flores, working alongside Manuel "El Toro" Chacón, from wild Agave angustifolia (the Pacifica variety) harvested in the Sierra de Sonora. The piñas are roasted for several days in an underground volcanic stone oven fired with mesquite and oak, milled by hand and with a shredder, fermented in vats with well water for six to twelve days, and double distilled in handmade copper alambiques. Where the brand's blanco is bottled straight off the still, this reposado takes a rest in oak before bottling at 45% ABV (90 proof), which softens the wild-agave edge and adds a layer of oak without burying the smoke and mineral character that defines bacanora. Casa Santeros is building a fully vertical distillery on the Oroz Coppel family ranch, with all of its agave to be grown and distilled on site, so future batches will be estate-made from field to bottle.
