Santo Cuviso is a bacanora from the town of Bacanora itself, in the Sierra of Sonora, made by Maestro Bacanorero Manuel "El Toro" Chacón, a third-generation producer, for the brand owned by Casa Tres Amigos. Bacanora is the agave spirit of Sonora, named for this town and protected by its own denomination of origin since 2000; the name Santo Cuviso, "holy bacanora," comes from the Ópata people and was recorded by a German missionary passing through the region in 1756. The Blanco is made from mature Agave angustifolia, the same species Oaxaca calls espadín, cooked in a conical earthen pit oven, milled mechanically, fermented naturally with wild yeast for up to 12 days, and double distilled in copper pot stills, then rested briefly in 5-liter glass jugs to settle before bottling at 45% ABV. Reviewer Eric Zandona of EZdrinking found fruit, citrus, and bright green vegetal notes on the nose that shift toward hard aged cheese and chocolate-caramel as it warms, with a smooth, balanced palate, a touch of sweetness, and a dry, ashy finish. At the American Distilling Institute's April 2019 craft spirits judging it took a Gold medal and was named Agave Spirit of the Year.
