Santo Cuviso Anis is a flavored bacanora from the town of Bacanora in the Sierra of Sonora, made by Maestro Bacanorero Manuel "El Toro" Chacón, a third-generation producer, for the brand owned by Casa Tres Amigos. Bacanora is Sonora's agave spirit, protected by its own denomination of origin since 2000, and the name Santo Cuviso means "holy bacanora" in the Ópata language. The base is the house Blanco, pit-roasted Agave angustifolia fermented with wild yeast and double distilled in copper pot stills; a portion is blended with a concentrated infusion of whole star anise pods and rested 10 to 14 days in 5-liter glass jugs before bottling at 40% ABV. Reviewer Eric Zandona of EZdrinking found earth, fruit, smoke, anise, and fresh fennel on the nose, light and herbaceous rather than heavy black licorice, with a rich body, an elegant medicinal edge that complements the agave, and a long, earthy finish with lingering anise. He suggests it as a digestif, in a hot toddy, or in place of absinthe in a Sazerac, and it earned a Double Gold medal and Best Flavored Bacanora at the American Distilling Institute's 2019 judging.
